The Ultimate Roast Chicken
Roast chicken is an ultimate classic, but how do you get this family favourite perfect? The perfect chicken must be moist and tender with crispy golden skin. It might seem overwhelming to get the perfect whole roast chicken but it is achievable with the right chicken.
#1 The first step is choosing the right chicken. Corn fed chicken tends to be superior in taste and texture to other standard types of chicken, and it must be cooked in a way that enhances the fine taste already present in the chicken. Corn fed chicken also is high in proteins and other nutrients, making it both a tasty as well as healthy choice.
#2 Use plenty of seasoning! Put the salt, pepper, garlic, rosemary and any other seasonings you are using right under the skin, and drizzle oil generously. This is because a lot of the seasoning can fall away from the chicken, leaving it less tasty.
#3 Decide between a rack or a pan. Putting the chicken on a rotisserie will enable it to become crispy all over, whereas in a pan the bottom will get stuck. Make sure to leave room for veggies either way.
#4 Corn fed chicken naturally has a golden colour, but squeezing lemon zest to soften the skin, then rubbing the skin with butter and sprinkling sea salt on it will enhance that golden colour resulting in beautiful golden crispy skin!
