
Potato, Olive and Chicken salad
A fresh, healthy salad, loaded with delicious seasonal flavors!
Ingredients

400g Chicken Breast

200g Baby Potatoes

1tbsp chili powder
-
1tsp Oregano
-
1tbsp Vinegar

1tbsp Olive oil
-
100g Cherry tomato
-
100g Green bell peppers
-
100g Black Olives
-
few leaves Basil leaves

to taste Salt and Pepper
Directions
Step 1
Mark as Complete
Peel the potatoes. Place on a baking tray. Season with salt, pepper and olive oil. Bake for 20 minutes or until tender.
Step 2

Marinate the chicken breast with chili powder, vinegar, salt, pepper, Oregano and olive oil.

Cook the chicken well over a grill or flat pan. Set aside for 5 minutes to rest. Slice the chicken thinly

Cut the bell pepper into fancy cubes & grill. Cut the cherry tomatoes in half

Combine salt, pepper and olive oil is a small bowl.
Step 6

Arrange the baked Baby Potatoes, Chicken, Bell pepper, Cherry Tomatoes and Black Olives in a large salad bowl and drizzle the simple salad dressing. Garnish with fresh Basil leaves
