One pot Seafood Rice

Quick version of paella. In a super healthy way, plus it's all cooked in one pan.

Saut├® onion, garlic and seafood in oil until slightly cooked.

Season with salt.

Add rice and saut├® for another few minutes.

Reduce the heat. Add seafood stock and Capsicum and tomatoes.

Step 5

Bring to boil and simmer with the lid on for 15 minutes or until liquid is absorbed and the rice is tender.

Step 6

Garnish is with freshly chopped Coriander
