Nyonya Curry base

-Cover the dry chilli in hot water. Leave to soften
-Dry roast the coriander, shrimp, cumin & fennel. Grind to a fine powder.
-Add onion, garlic & soaked chill into a blender. Grind to fine paste.
-In a pot add oil, Grind spices, Grind onion- chilli, turmeric & cinnamon stick.
-Fry on a low heat for about 10 minutes or until the raw taste of the mixture is gone.
-Add stock. Mix well & bring to boil
-Add coconut milk. Season with fish sauce.

10 dried red chilies
1tbsp Dry Shrimp
1tbsp Coriander Seeds
1tsp fennel seeds
2tsp cumin seeds
4 Garlic Cloves roughly chopped
2 Large Onions roughly chopped
1tbsp Turmeric
1 lemongrass stalk white part only, chopped
600ml Chicken stock
250ml Coconut milk (100 coconut powder + 250ml water)
25ml Vegetable oil
to taste Fish Sauce
1 Cinnamon
