This scrumptious dish is ideally a 4step process but to start, we need to ensure all the ingredients are available. You are going to need the following:

Preheat the oven to 350 °

Evenly spread the rice in a 13x9 inch baking dish which has been lightly sprayed with oil. Continue to arrange the chicken on top of the rice and pour the broth into the baking dish. Tightly cover the dish with foil and bake for 45 minutes.

While the chicken and rice is cooking, whisk yogurt, honey, mustard, soya sauce, ginger and season with salt and pepper. Once the chicken and rice is done (45 minutes later), spread the yogurt mixture over the chicken and continue to bake (uncovered with foil) for a further 15 minutes.

Remove the dish from the oven and let it rest for 10 minutes before plating and eating with glee.

2 1⁄4 cups Chicken Broth
1/2 cup Nonfat Yogurt
1/4 cup Honey
2 tbsp Dijon Mustard
1 tbsp Soy Sauce
1/2 tsp Ground Ginger
1/4 tsp Salt
Ground Pepper fresh
